Da Pai stalls originated from hawkers, and they used to be concentrated on the streets of Chinese communities such as Central and Sheung Wan, Sai Ying Pun and Yau Ma Tei. In the early years, big pai stalls often used fire water as the main fuel, and the firepower made the food very hot, which became a feature. Diversified food is another feature, serving the public from breakfast to supper. Because "Pai" and "Pai" have the same pronunciation, dai pai stall has also become a popular way of writing. Due to cholera and other infectious diseases, the government stopped issuing licenses in the mid-1970s, and later stipulated that after the holder passed away, the next generation could not continue to operate. Since then, the street food culture of big pai dong has declined, and there were only about 20 restaurants left in the millennium.
