**Our Roasting Philosophy**
We don't blindly chase roast levels. Our primary goal is to reveal the inherent flavors of the green coffee beans.
We begin by testing the beans using our standard roasting method to understand their overall profile. After cupping, we determine the desired flavor profile based on the bean's characteristics. We then review and adjust the roasting curve, refining it to find the optimal roast point that maximizes the bean's potential. Our emphasis is on distinct flavors, bright acidity, rich sweetness, and overall balance.
