**[Dish 1: Mediterranean Herb Braised Lamb Riblets with Tomatoes]**
Layers of aromatic Mediterranean herbs. The natural acidity of tomatoes balances the richness of the lamb, creating a gelatinous texture that is rich yet light. The meat is tender, yet retains its fibrous structure, making it a warming spring braised dish.

Carefully selected strips of meat from between the rib bones of young lamb, rich in marbling and juicy. Suitable for braising, stewing, grilling, or curry dishes. **[Dish 3: Zucchini and Shrimp Mini Pancakes]**
Diced fire shrimp, known for their rich seafood flavor, are mixed with finely grated zucchini, a small amount of batter, and herbs. Pan-fried until golden brown and crispy on the outside. The zucchini brings out natural sweetness, while the fire shrimp enhance the umami. The overall texture is crispy on the outside and moist on the inside, a refreshing dish that combines vegetables and protein, perfect for spring outings or picnics.
**★ Featuring Our Ingredient: Penghu Wild Hand-Peeled Fire Shrimp**
Fire shrimp (also known as thick-shelled shrimp, dog shrimp, or golden hook shrimp) from the waters of Penghu, named for the irregular red spots on their shells. Although not large and with a thick, rough shell, their meat is exceptionally fine and springy, with a rich, sweet flavor and a unique mellow aroma, even reminiscent of crab. Whether stir-fried, used in soups, congee, or to make classic Tainan shrimp rice, they perfectly showcase their delicate flavor and provide a rich seafood experience.
**About Chef Kevin Yen**
Former head chef at the Ambassador Hotel Taipei, currently an instructor in hospitality and culinary arts at a vocational high school, with extensive hotel experience. He specializes in creative Western cuisine, Chinese dim sum, international cuisine, and Southeast Asian dishes.
Filled with passion and dedication for education, he is committed to passing on his hotel experience and Western culinary techniques to his students. He has led students to win numerous cooking competitions. In addition to his teaching work at school, he has been invited multiple times to serve as a guest instructor for industry guilds, sharing practical experience and cooking skills. With his profound culinary expertise and rich teaching experience, he has been honored with the "Top Ten Outstanding Tourism and Hospitality Masters" award!
