Finely mince the garlic and red chili. Chop the green onion. 2. Heat oil in a pan over medium-low heat. Sauté the minced garlic and red chili until fragrant. Turn to medium heat, add the minced pork, and stir-fry quickly with a spatula to break it up. When the meat is about 70% cooked (still pinkish), add the rice wine and continue to stir-fry. 3. Add fish sauce, soy sauce, oyster sauce, and sugar in sequence. Stir-fry thoroughly to allow the meat to absorb the flavors of the sauces. 4.
