The classic version of Umeyu includes - plum and shiso plum jam and Umeko candies. Chumei, plums that have been pickled for a year, retain the crunchy texture of green plums. Due to a year of precipitation, the aroma of green plums is no longer so obvious, with a long lasting flavor and a sweet and sour taste. Perilla plum jam is made from carefully selected green plums from our own plum garden. We insist on not using chemical fertilizers, chemical pesticides and herbicides, and are cultivated using natural farming methods. Pickled for three years and boiled into a sauce, it has a delicate and even texture, not sweet and refreshing.
