La belle's Classic Original Butterfly Pastry is an inspired rendition of the renowned French pâtissier Pierre Hermé's recipe, thoughtfully refined. While the ingredients are simple, the creation process is remarkably intricate. Dough, made from flour, natural butter, and water, is chilled for half a day to mature. It is then completely encased in fermented butter. Each stage of rolling and folding is followed by refrigeration until the dough is thoroughly relaxed. This process is repeated six times with a three-fold technique, culminating in our signature 730-layer pastry dough. After careful shaping and a sprinkle of tempting sugar crystals, they are baked at a high temperature of 250°C to achieve perfect puff.
