Heat the pan: According to the Leidenfrost effect, when the temperature exceeds 193°C, water droplets are protected by a vapor film, forming beads that vaporize slowly rather than evaporating. The seemingly frictionless sliding in the pan is what we commonly refer to as the "boiling water bead" phenomenon. This indicates the pan is fully preheated. 2. Heat the oil: After preheating, dry the water droplets, turn the heat to medium-low, and add a high-smoke-point cooking oil. Allow the oil to penetrate the microscopic pores of the pan to form a protective film. Once oil patterns appear, you can add your ingredients. 3.
