Every shop claims their quality is excellent; how does one differentiate the good from the bad? I don't know how others operate, but I can only truthfully explain HOFFE's practices. ✅ Generally, small quantities of green beans mean higher prices. However, because they are expensive, they are usually vacuum-sealed, which preserves them better and keeps them fresher. These are almost always the latest seasonal beans, which is why HOFFE insists on small batches and variety. ✅ HOFFE sorts defective beans by human eyes. We sort both green and roasted beans once each to remove any defects. However, I must admit, if you're willing to pay for high-quality green beans, the proportion of defective beans will be much lower. If you're just looking for a bargain, the entire bag might be full of defective beans. ✅ Nitrogen flushing weakens the activity of oxygen inside, slowing down oxidation. However, there is still oxygen present. HOFFE uses "oxygen absorbers" which remove the oxygen, creating an anaerobic state. This significantly inhibits fungi and achieves food preservation. An anaerobic state is currently a relatively effective method to slow down coffee oxidation. The downside is the higher cost, which increases our expenses! ✅ Roasting machines need frequent cleaning to prevent dirt and grime buildup. Sometimes the burnt taste isn't from roasting too dark, but from accumulated charred beans inside the roaster. Therefore, HOFFE cleans every 3 months and performs a deep clean every 6 months. ✅ Although HOFFE COFFEE is a small shop, we maintain NT$12 million in product liability insurance annually. This is not only a responsibility to our own products but also a guarantee for consumers. The disadvantage? Again, it's an added expense!! As the saying goes, people will do business even if it means a small profit, but no one does business at a loss. For businesses to operate, there are no unprofitable ventures. Step 2: Pour 120g in a circular motion from center outwards, aiming to finish pouring around 1 minute. Step 3: Pour 80g rapidly in a circular motion from center outwards.
