Sometimes I wonder, when comparing Yirgacheffe coffees labeled the same, why the price for half a pound can range from NT$150 to NT$650!
Every shop claims their quality is superior; how do we discern the difference?
I don't know how others operate, but I can only share HOFFE's practices with you honestly.
✅ Generally, small batches of green beans are more expensive. However, because of their cost, they are usually vacuum-sealed, offering better storage conditions and freshness, typically using the latest seasonal beans. Therefore, HOFFE insists on a small-batch, diverse selection.
✅ HOFFE relies on the human eye to select defective beans, so we hand-sort both green and roasted beans to remove them. However, I must admit that investing in high-quality green beans significantly reduces the proportion of defects. If one only seeks cheap options, the entire batch might be filled with defective beans.
✅ Nitrogen flushing reduces oxygen activity within the packaging, slowing oxidation. However, oxygen still remains. HOFFE uses "oxygen absorbers" to remove residual oxygen, creating an anaerobic environment. This significantly inhibits fungal growth and preserves food freshness. An anaerobic state is currently the most effective method for slowing coffee oxidation. The downside is the higher cost, which increases our expenses!
✅ Coffee roasters require frequent cleaning to prevent residue buildup. The burnt taste in coffee isn't always due to a deep roast; sometimes, it's from accumulated burnt beans inside the roaster. Therefore, Hoffe cleans every 3 months and performs a deep clean every 6 months.
✅ Although HOFFE COFFEE is a small establishment, we maintain NT$12 million in product liability insurance annually. This is not only a responsibility towards our products but also a guarantee for our customers. The drawback, once again, is increased expenditure!
As the saying goes, people will do business even if it means a loss, but no one will do business at a loss. Businesses operate to make a profit, so low prices reflect low-cost practices, and high prices reflect high-standard commitments. HOFFE doesn't presume to be a top-tier establishment operating in isolation; hence, we don't have the audacity to charge exorbitant prices. HOFFE prefers to approach things with a grounded attitude, offering stable quality, and sharing our coffee and design work step by step. We hope that customers who have purchased our products and appreciate them will spread the word, allowing more people to discover and enjoy our coffee.
This is the philosophy behind my management of HOFFE. While it may seem old-fashioned, it provides me with peace of mind. I also hope that when you purchase HOFFE products, you can enjoy your coffee with the same peace of mind.

**HOFFE COFFEE Recommended Pour-Over Parameters:**
Water Temperature: Light Roast, Light-Medium Roast: Recommended 88-91°C
Medium Roast, Medium-Deep Roast: Recommended 85-88°C
Coffee-to-Water Ratio: 20 grams (Medium grind, Comandante C40 Mk4 setting 4-4.5)
Total Volume: Add 300g of water

Step 1: Add 40g of water, pre-infuse for 30 seconds.
Step 2: Pour 120g of water in outward circles from the center, aiming for a drawdown around 1 minute.
Step 3: Quickly increase water flow and pour an additional 80g in outward circles from the center.
Step 4: Use a single, gentle pour in the center with a slightly reduced water flow, adding the final 60g.
Total extraction time approximately 2 minutes.
