Every shop claims their quality is excellent, so how do you distinguish between good and bad? I don't know how others operate, but I can only honestly explain HOFFE's methods. ✅ Generally, smaller quantities of green beans mean higher prices. However, because they are more expensive, they are usually vacuum-sealed, ensuring better storage conditions and freshness. These are almost always the latest seasonal beans, which is why HOFFE insists on a small-batch, diverse selection. ✅ HOFFE inspects for defective beans by eye. We sort both green and roasted beans once each to remove any imperfections. However, I must admit that if you invest in high-quality green beans, the proportion of defective beans will be significantly lower. If you're just chasing cheap prices, the entire bag might be full of defects. ✅ Sealing with nitrogen reduces oxygen activity and slows down oxidation, but there is still oxygen present. HOFFE uses "oxygen absorbers" to remove oxygen, creating an anaerobic state that significantly inhibits fungal growth and preserves food freshness. An anaerobic environment is currently the most effective method for slowing down coffee oxidation, but the downside is the higher cost, which increases our expenses! ✅ Roasting machines require frequent cleaning to prevent the buildup of residue. Sometimes, the burnt taste in coffee isn't due to deep roasting but rather from accumulated burnt beans inside the machine. Therefore, Hoffe cleans every 3 months and performs a deep clean every 6 months. ✅ Although HOFFE COFFEE is a small establishment, we maintain NT$12 million in product liability insurance annually. This is not only a responsibility to our own products but also a guarantee for our consumers. The disadvantage, again, is the additional cost! As the saying goes, people will do business even if it means losing money, but no one does business at a loss.
