Botanically, the coffee tree belongs to the evergreen genus Coffea of the Rubiaceae family. Coffee beans are the seeds of the coffee tree's fruit, with three main varieties: Arabica, Robusta, and Liberica. World-renowned specialty coffees originate from the Arabica variety, which itself has numerous sub-varieties evolved, hybridized, or mutated over time.

Coffee Processes
This refers to the transformation of ripe red cherries into dried green beans. Each processing method has its merits and drawbacks, influenced by the natural environment and specific demands of the origin. Therefore, each origin has its suitable processing method, broadly categorized as follows:
**【Natural / Sundried / Dry Process】**
Also known as natural drying or non-washed processing, this is the most traditional and common method, requiring no water during processing. Originating in Ethiopia, harvested coffee cherries are sun-dried and then de-hulled. The beans remain inside during this extended drying period, absorbing flavors from the skin, pulp, and mucilage, resulting in fuller sweetness, body, and unique aromas.
Coffee producers spread all cherries on drying beds under the sun, which can be patios or raised platforms. Over 3-6 weeks, the cherries ferment. Producers turn them to ensure even drying and prevent spoilage. During this time, sugars and mucilage clinging to the seeds develop flavors and enhance sweetness. Once dried, machines separate the dried pulp and skin from the seeds. Natural processed coffees are juicy, syrupy, and well worth the effort.
**【Washed / Wet Process】**
Also known as wet processing, this method involves removing the skin and pulp from the coffee cherries before drying. The beans are then soaked in fermentation tanks to remove the residual mucilage clinging to the seeds, followed by washing with water and drying under the sun or by machine. Washed processing yields a cleaner, crisper taste compared to natural processing, with a lighter body and typically brighter flavor expression. It possesses the rich acidity characteristic of specialty coffee and retains fruit notes, often making its origin more discernible.
**【Honey / Pulped Natural / Semi-dry Process】**
The honey process is a hybrid method, combining elements of natural and washed processing, pioneered in Costa Rica. Similar to the washed process, the skin and pulp are removed, but instead of fermentation tanks, the beans are sun-dried with the mucilage layer intact. "Honey" refers not to added honey but to the very sticky mucilage layer, which feels like honey, hence the name. This mucilage layer retains a high proportion of sugars and acids, making it crucial to the honey process. The amount of mucilage left behind dictates the sweetness.
