Taiwanese Braised Pork Rice – Lu Rou Fan
Originating in Tainan, Lu Rou Fan is considered a quintessential Taiwanese folk snack, with regional variations defining its meaning across the island.
In Northern Taiwan, it refers to white rice topped with a savory braised minced pork and soy sauce gravy, sometimes enriched with ingredients like diced shiitake mushrooms. South of Taichung, dishes without a whole slice or chunk of meat are referred to as "Rou Zao Fan" (minced meat sauce rice).
In Southern Taiwan, Lu Rou Fan specifically denotes braised pork rice with chunks of braised meat and preserved radish.
