The estate is run by father and son Alberto and Diego Guardia, who have continued to focus on high-quality coffee production since taking over in the 1970s. The estate uses hydroelectric power, relies entirely on renewable energy, and uses professionally treated water for irrigation. More than a quarter of the land is reserved as forest area, further demonstrating its environmental protection philosophy. The Sonora estate grows a variety of Arabica varieties, of which Caturra is a key one. This variety is derived from a natural mutation of Bourbon and has the characteristics of short plants and high yields. Because its genes come from Bourbon, Caturra has a rich, floral and fruity flavor. The coffee beans from the manor are usually honey processed and naturally sun-dried, which not only saves water, but also enhances the sweetness and complexity of the coffee beans. Sonora is particularly good at making honey-processed coffee, and its blend of dark honey and natural processing can bring out deeper flavor expressions, including chocolate and fruity tones.
