Coffee originates in Ethiopia, Africa. Regions suitable for coffee growth are between 25 degrees north and south latitude, including the equator. Coffee growing regions require annual rainfall of 1500 to 2000 millimeters, coinciding with the coffee tree's flowering cycle. Additionally, fertile soil, sufficient sunlight, and appropriate altitude are essential. The conditions for cultivating high-quality coffee are quite strict, including sunlight, rainfall, soil, temperature, as well as the method of harvesting and processing the beans, all of which affect coffee quality.
JC Coffee carefully selects renowned coffee-producing regions worldwide and is committed to producing drip coffee from high-quality single estates, including: Taiwan, Panama, El Salvador, Costa Rica, Guatemala, Honduras, Ethiopia, Kenya, Uganda, Indonesia Sumatra, and other single estates.

Botanically, the coffee tree is an evergreen belonging to the genus Coffea in the Rubiaceae family. Coffee beans are the seeds of the coffee tree's fruit. There are three main varieties: Arabica, Robusta, and Liberica. All specialty coffees in the world come from the Arabica variety, and within Arabica, there are various subspecies that have evolved and hybridized.
JC Coffee selects various Arabica subspecies to produce drip coffee, including: Geisha, Pacamara, Heirloom, Bourbon, Typica, Caturra, Pacas, SL28, SL34, Tim Tim, Catuai, and other world-renowned specialty coffees.
JC Coffee prints the varietal information on the packaging so you can understand which varietal's flavor you are tasting when you drink coffee. Although flavors vary due to multiple factors, at least we can offer a glimpse into the vast world of coffee varietals.

Coffee Processes refer to the transformation of ripe red fruit into dry green beans. Each processing method has its advantages and disadvantages, influenced by the natural environment and regional demands. Therefore, each origin has its suitable processing method, generally as follows:
**【Natural / Sundried / Dry Processed】**
Also known as natural drying or non-washed processing, this is the most traditional and common method, requiring no water during processing. Originating in Ethiopia, harvested coffee cherries are sun-dried and then de-hulled, with the seeds still inside. During the prolonged sun-drying, they absorb flavors from the husk, pulp, and mucilage, resulting in a fuller sweetness and body, and are prone to developing unique aromas. Coffee producers place all cherries on drying beds in the sun, which can be patios or elevated drying tables. Over 3-6 weeks, the coffee ferments, and producers turn them to ensure even drying and prevent spoilage. During this period, the sugars in the fruit and the mucilage adhering to the seeds create flavor and enhance sweetness. After drying, machines separate the dried pulp and husk from the seeds. Natural processed coffees are juicy and syrupy, well worth the effort.
**【Washed / Wet Processed】**
Also called wet processing, before drying, all coffee cherries have their skin and pulp removed. They are then soaked in fermentation tanks to remove any remaining mucilage from the seeds, followed by washing with water, and drying in the sun or by machine. Washed processed coffee offers a cleaner, crisper taste compared to natural processing. Its body is lighter, and it typically exhibits brighter flavor profiles with the rich acidity characteristic of specialty coffee. It also has fruity notes and is generally easier to distinguish.
**【Honey / Pulped Natural / Semi-dry Process】**
The Honey process is a method that combines elements of the Natural and Washed processes. It originated in Costa Rica. Similar to the Washed process, the skin and pulp are removed, but instead of using fermentation tanks, the mucilage is retained and sun-dried. The term "Honey" does not refer to added honey but to the sticky mucilage layer, which is as viscous as honey, hence the name "Honey Process." The mucilage layer retains a high proportion of sugars and acids, which is key to the Honey process. The amount of mucilage left determines the sweetness.
