The owner of El Sunzita – Mauricio and Mary acquired a part of the farm 29 years ago and started operating the entire farm independently from 2015. They are a natural fit, Mauricio is a very rich agronomist and Mary has a keen mind on business. As soon as they took over the farm, they decided to take El Salvador's coffee to a new height. To this end, they established plant cultivation to take care of the more fragile coffee trees, and set up a pilot-type washing plant to find the best way to grow and handle from the constant experiment. Most of El Salvador's coffee is Bourbon, and this is a rare Pacas. Pacas is a natural mutant of Bourbon, first discovered in the production area of Santa Ana in 1949.
