Each batch of cherries is hand-picked by smallholder farmers, delivered to the washing station for double fermentation, repeatedly washed, and then slowly dried on raised beds. These meticulous processes result in the unique clarity, bright acidity, and delicate fruit aroma layers characteristic of the Karaa batch.
