Cocoa made of six processes

2. Cocoa fruit
According to legend, in the Mayan period, when cocoa beans were used as a currency, four grains of cocoa beans could buy a rabbit, ten grains could buy a woman to live overnight, and 100 grains of cocoa beans could buy a slave.
3. Cocoa fermentation
Fermentation is the beginning of the birth of chocolate. The process of chocolate is from cocoa cultivation → harvesting → fermentation → baking → coarse grinding → fine grinding → tempering and forming. In this series of processes, fermentation is chocolate aroma. A big focus with flavor.
4. Exposure
After the cocoa beans were fermented, we used the sun to dry the cocoa beans, reducing the moisture of the cocoa beans from 60% to about 7.5%. At the beginning of the drying, cocoa beans emit a strong sour gas, but as the sun shines, the smell will gradually become warmer, making the cocoa chocolate aroma more prominent.
5. Baking
After baking cocoa beans, and then shelling, is the raw material for making chocolate. It can already be eaten directly or as a raw material for biscuits and pastries. Although the bitterness of the pure cocoa beans is stronger, the cocoa beans are chewed alone, and the unique cocoa flavor can be tasted.
