**Stewed with various spices, the beef tripe is chewy and sweet**
[Beef Tendon] The tendon is carefully selected from the front leg part of the cow. It contains rich gelatin and requires a lot of time and effort to stew. After stewing, it is soft, chewy and has an excellent flavor.
[Tripe] Honeycomb tripe is also known as money tripe. It contains protein and various minerals. After being stewed thoroughly, it has a solid texture with a slight chewy texture.
[Beef Tendon] In addition to the collagen-rich beef tendons and tripe with a chewy texture, there is also beef tendon with a firm texture and good taste. It is low in fat and rich in high-quality protein, adding to the overall layering.
[Braising sauce] is made of up to 20 kinds of spicy sauces such as peppercorns, grass fruit, fennel, cardamom, etc. During the long-term slow-cooking process of the beef tripe, the salty and fragrant braising sauce will penetrate into the meat texture drop by drop, making the meat sweet and tasty, with a solid and elastic texture, enhancing the flavor level, and also giving the rice dumplings a warm and spicy aroma.

The Huadiao wine that is mixed into the "Huadiao Niu Ben Bao Zong" in the last process is a type of rice wine, one of the three ancient wines in the world. It is a high-quality Shaoxing wine, made from rice, wheat and specially selected koji seeds, and is brewed in an improved traditional method of filling jars and maturing. It is dark amber in color, has a unique flavor, rich aroma and a mellow body, and is the best among rice wines. After many repeated adjustments, Thomas Butcher Shop carefully selected two types of bamboo leaves to wrap the stiff and resistant long glutinous rice. The Linen bamboo leaves have the fragrance of bamboo leaves, while the gui bamboo leaves have the fragrance of bamboo shoots, which increase the fragrance variation, and are paired with the aroma of rice, meat, Huadiao wine, etc., plus crisp sauerkraut to neutralize the fat in the beef, making the overall flavor more balanced and not greasy.
