Coffee Processes
This refers to the transformation of ripe red cherries into dried green beans. Each processing method has its merits and drawbacks, influenced by the natural environment and specific demands of the origin. Consequently, each region adopts suitable processing methods, briefly outlined below.
**【Natural / Sundried / Dry Process】**
Also known as natural drying or non-washed processing, this is the most traditional and common method, requiring no water. Originating in Ethiopia, harvested coffee cherries are sun-dried before hulling, with the beans still inside. During prolonged sun exposure, they absorb flavors from the skin, pulp, and mucilage, resulting in fuller sweetness, body, and unique aromas.
Coffee producers place all cherries on drying beds under the sun, which can be patios or elevated drying tables. Over 3-6 weeks, the coffee ferments, and producers turn them to ensure even drying and prevent spoilage. During this period, the sugars within the fruit and the mucilage adhering to the seed develop flavor and enhance sweetness. After drying, machines separate the dried pulp and skin from the seeds. Natural processed coffees are juicy and syrupy, well worth the effort.
**【Washed / Wet Process】**
Also known as wet processing, this method involves removing the skin and pulp from the coffee cherries before drying. The beans are then soaked in fermentation tanks to remove the remaining mucilage layer from the seed, followed by washing with water and drying in the sun or by machine.
Washed processing yields a cleaner, crisper cup compared to natural processing. The body is typically lighter, with brighter flavor profiles and the essential acidity characteristic of specialty coffee. Fruit notes are still present, and the flavors are generally easier to distinguish.
**【Honey / Pulped Natural / Semi-dry Process】**
The honey process is a hybrid method combining elements of natural and washed processing, first developed in Costa Rica. Similar to the washed process, the skin and pulp are removed, but instead of fermentation tanks, the beans are sun-dried with the mucilage layer intact. The term "honey" does not refer to added honey; rather, it describes the sticky mucilage layer, which is as viscous as honey. The mucilage layer retains a high proportion of sugars and acids, which is key to the honey process. The amount of mucilage left determines the sweetness.
