Refined salt, on the other hand, undergoes a dialysis process to remove minerals, leaving behind high-purity sodium chloride with only a pure salty taste, often perceived as a harsh saltiness. The Zhounan Salt Field is located in Budai, Chiayi, one of many salt fields in southern Taiwan. Established in 1824, it reached its peak production in the 1980s. However, even then, Taiwan's salt production couldn't meet domestic demand, and the market faced competition from cheap imported salt. To compete, the Taiwan Salt Company mechanized salt field operations, forcing salt workers to leave. Ultimately, this effort failed, and the Budai Salt Field was closed in 2001, followed by the closure of all salt fields the next year, marking the end of Taiwan's traditional sun-dried salt production. Seven years later, the Budai Bay Cultural Association, along with local veteran salt workers and aspiring young individuals, gradually revived the salt fields. In addition to restoring sun-dried salt production, they fostered coexistence with the environment, transforming the area into a space that preserves history and continues its cultural heritage. Zhounan sea salt is produced in this environment, leveraging the accumulated experience and techniques of veteran salt workers. Taiwan's sun-dried salt production history dates back to the era of Koxinga. After centuries of ups and downs, it has finally been passed down to the present. It would be a shame for it to be submerged by the past.
