Therefore, we source only premium green specialty coffee beans and meticulously determine the optimal roast profile to showcase their best flavor. __Roast Levels__ Light Roast, Light-Medium Roast, Medium Roast. Each of our coffee offerings falls within these three roast levels. To guarantee the optimal flavor expression for every coffee, we conduct multiple roasting tests and cuppings upon initial sourcing to identify the ideal roast level for each bean. We designate only one best roast level for each coffee to prevent discrepancies in roast perception with our customers. This also ensures that if you have any questions about the flavor of the coffee you purchase, you can discuss it directly with us. We are happy to share our insights and demonstrate by brewing it for you on the spot. __Micro-Lot Roasting__ We use the GoCoRo digital hot air roaster, designed in-house and among the first in Taiwan with app control. The roaster's designer, Fred Feng, is our roaster. The maximum batch size is only 300g, so after roasting and flavor testing, we package and sell our coffee in half-pound bags. __Order-Based Roasting__ In addition to the roasted beans scheduled for sale in our store this week (we only sell roasted beans within two weeks of roasting), all online orders will be scheduled for roasting on the day the order is received.
