**Geisha/Gesha Varietal**
The Geisha/Gesha coffee, once hailed by Forbes as one of the "World's Most Expensive Coffees," is a legendary name in the specialty coffee realm. There has been considerable confusion regarding the Geisha varietal, as multiple genetically distinct plant types are referred to as Geisha, many originating from similar geographical areas in Ethiopia. Recent genetic diversity analysis by World Coffee Research has confirmed that the T2722 variety cultivated in Panama and its progeny are unique and consistent. When managed well at high altitudes, it correlates with exceptionally high cup quality and is renowned for its delicate floral, jasmine, and peach-like aromas.
The spelling of "Geisha" and "Gesha" is often used interchangeably, stemming from transliteration as there is no fixed translation from Ethiopian dialects to English. The coffee was initially recorded with the "Geisha" spelling in cultivation records, and this spelling was largely maintained by coffee researchers and databases for decades, leading to its initial widespread adoption in the coffee industry. The varietal was originally collected from a mountain in Ethiopia, the name of which is commonly translated into English as either Gesha or Geisha.

Coffee Processes
Refer to the transformation of ripe red cherries into dried green beans. Each processing method has its merits and drawbacks, influenced by the natural environment and specific demands of the origin. Consequently, each origin employs processing methods best suited to its conditions. A brief overview is provided below.
**【Natural Process】Natural / Sundried / Dry Processed**
Also known as natural drying or non-washed processing, this is the most traditional and common method, which does not involve water. Originating in Ethiopia, coffee cherries are harvested and dried in the sun before hulling. The seeds remain inside, absorbing flavors from the skin, pulp, and mucilage during the extended drying period. This results in a fuller body, enhanced sweetness, and the development of unique aromatic profiles.
Coffee producers place all cherries on drying beds in the sun, which can be patios or raised drying tables. Over a period of 3-6 weeks, the coffee ferments. Producers rake them to ensure even drying and prevent spoilage. During this time, the sugars within the fruit and the mucilage adhering to the seeds create flavors and enhance sweetness. Once dried, machines are used to separate the dried pulp and skin from the seeds. Naturally processed coffees are juicy, syrupy, and well worth the effort.

**【Washed Process】Washed / Wet Processed**
Also known as wet processing, this method involves removing the skin and pulp from the coffee cherries before drying. The beans are then soaked in fermentation tanks to remove any remaining mucilage, followed by washing with water and drying in the sun or by machine.
Washed processed coffee offers a cleaner, crisper cup with a lighter body compared to the natural process. It typically exhibits brighter flavor characteristics, possessing the bright acidity essential for specialty coffee. While it can still display fruity notes, these are often more distinct and easier to discern.

**【Honey Process】Honey / Pulped Natural / Semi-dry Process**
The Honey process is a hybrid method, combining elements of the Natural and Washed processes. It was first developed in Costa Rica. Similar to the Washed process, the skin and pulp are removed, but instead of using fermentation tanks, the mucilage layer is retained and dried in the sun. The term "honey" does not refer to added honey but to the sticky mucilage layer, which resembles honey in texture, hence the name. The mucilage layer retains a high proportion of sugars and acids, which is key to the Honey process. The amount of mucilage left on the bean determines the sweetness.
The flavor profile of Honey processed coffee falls between that of Natural and Washed coffees, resulting in a very unique cup. It offers a cleaner mouthfeel than Natural process and, due to the retained mucilage, a richer syrupy sweetness with more pronounced acidity, yet it remains more full-bodied than Washed coffee.
