Coffee Processes
This refers to the transformation of ripe red cherries into dried green beans. Each processing method has its merits and demerits, influenced by the local environment and specific needs, leading to distinct preferences in different regions. Here's a brief overview:
【Natural Process】Natural / Sundried / Dry Processed
Also known as dry-processed or sun-dried, this is the most traditional and common method, requiring no water during processing. Originating in Ethiopia, coffee cherries are dried in the sun before hulling, with the beans still inside. During this prolonged sun exposure, the beans absorb flavors from the husk, pulp, and mucilage, resulting in fuller sweetness, a richer body, and the development of unique aromas.
Coffee producers spread all the cherries on drying beds under the sun, which can be patios or raised platforms. Over 3-6 weeks, the coffee ferments, and producers turn them for even drying and to prevent spoilage. During this period, the sugars and mucilage adhering to the seeds develop flavor and contribute to sweetness. After drying, machines are used to separate the dried pulp and husk from the seeds. Naturally processed coffees are juicy and syrupy, a testament to the labor involved.

【Washed Process】Washed / Wet Processed
Also known as wet-milled, this method involves removing the skin and pulp from the coffee cherries before drying. The beans are then soaked in fermentation tanks to remove the mucilage clinging to the seeds, followed by washing with water and drying under the sun or by machine.
Compared to the natural process, the washed process yields a cleaner, crisper cup with a lighter body. It typically offers brighter flavor profiles and the essential bright acidity characteristic of specialty coffee, often with fruity notes that are generally easier to distinguish.

【Honey Process】Honey / Pulped Natural / Semi-dry Process
The honey process is a hybrid method, combining elements of both the natural and washed processes, with its development pioneered in Costa Rica. Similar to the washed process, the skin and pulp are removed, but instead of fermentation tanks, the mucilage is retained and dried under the sun. The term "honey" refers to the sticky mucilage layer, not the addition of honey itself. This mucilage layer retains a high proportion of sugars and acids, which is key to the honey process, with the amount of remaining mucilage determining the sweetness.
The flavor profile of the honey process falls between that of the natural and washed methods, producing a highly unique coffee. It offers a cleaner cup than the natural process, with richer, syrupy sweetness and more pronounced acidity due to the retained mucilage, yet it is still more full-bodied than the washed process.
