【 Premium Cold Brew Coffee 】 700ml
#Innocent Series
The Innocent Series features cold brew coffee made with globally sourced, award-winning beans, offering you the chance to experience their exceptional taste. This embodies Wingman's touch of innocent romance~
The 2026 edition is crafted using the #CornerstoneEstate coffee beans, a Yellow Honey processed Catucai 785 variety, which secured second place in the independent auction from Espírito Santo, Brazil, procured by Wingman.
We are delighted to have acquired the second-place lot at the 12th Micro-Lot Competition of Espírito Santo, the #IndependentAuction, held in late January 2026, in collaboration with green bean supplier @linkingcoffee_tw at @bourboncoffees.

Let's first touch upon a fact about Brazilian coffee you might not know.
Brazil is the world's largest coffee producer, yet the term "Brazilian coffee" encompasses a far greater diversity than you might imagine.
Minas Gerais accounts for nearly 50% of Brazil's total production, with sub-regions like Sul de Minas, Cerrado Mineiro, and Mantiqueira defining the common perception of Brazilian coffee—nutty, caramel, low acidity, and smooth. The Mogiana region in São Paulo and the highlands of Bahia each offer their own distinct flavor profiles.
These regions share a commonality: coffee trees bloom from October to November and are harvested from April to September, following a consistent rhythm that dictates the entire Brazilian coffee season.
However, the mountainous regions of Espírito Santo operate on a completely different schedule.
Influenced by the humid Atlantic air currents, coffee trees here bloom from January to March, two to three months later than in most other Brazilian regions, with harvests delayed until October to December. This prolonged, slow maturation process leads to higher sugar accumulation and more complex flavor layers—floral notes, tropical fruits, and vibrant acidity, exhibiting a style akin to Central American coffees, yet retaining a uniquely Brazilian sweetness.
So, why does Espírito Santo host its own auction?
Due to their staggered harvest season, they are unable to participate in the main Brazilian auctions.
The submission and judging timelines for major international auctions like Brazil's COE align with the mainstream Brazilian harvest season. By the time beans from other regions are ready, the coffee cherries in Espírito Santo are still ripening on the trees. Their schedules simply don't match, leaving even the highest quality beans without a platform.
Gabriel and Cristiano, founders of Bourbon Specialty Coffees, the organizing body, are descendants of coffee farmers themselves. In 1999, their own coffee won both the Cup of Excellence and Concurso Illy. They deeply understood the potential of this region being systematically overlooked. In 2000, they founded Bourbon, specifically designing this auction to align with Espírito Santo's harvest rhythm, allowing the quality of more outstanding estates to be recognized.
Returning to our protagonist: Cornerstone Estate, the second-place lot we acquired at auction.
Their estate is located at an altitude of 1,200 meters, spanning 8 hectares, and producing only 1,380 kilograms of green beans annually. The estate was acquired in 1996 and is managed by Daudete Ventorim, working closely with Geovani and Jocivania to meticulously oversee every detail from the field to harvest. Geovani and Jocivania are also raising their daughter on this land, passing down a sense of responsibility for the earth as a family value.
Interestingly, about the variety of this lot: Catucai 785, a hybrid developed by the Brazilian Agricultural Research Corporation (IAC) from Icatu × Catuai. It exhibits strong resistance to rust while retaining the flavor depth of specialty Arabica.
Let's highlight a key point here: the Icatu variety. It was initially developed through a cross between Robusta and Bourbon (artificially induced polyploidy), followed by backcrossing the hybrid with Mundo Novo, leading to the final cultivar. Therefore, experienced coffee professionals hearing "Catucai 785" might instinctively associate it with Robusta genes.
But don't let that derail your reasoning.
The presence of Robusta genes does not mean its flavor is inferior to pure Arabica. This is precisely where Catucai 785 shines.
In the last six years of the Brazil COE, several award-winning estates have achieved scores of 88 points or higher using Catucai 785. Even more intriguingly, the winner of the 2023 World Barista Championship, Boram Um, primarily uses Catucai 785 at her family estate, Fazenda Um, in Espírito Santo.
Allow me to digress slightly.
In recent years, media outlets have continuously reported on the impact of global climate change on major coffee-producing countries. Professor Huai-Tsung Han also mentioned in "The Fourth Wave of Specialty Coffee" that coffee production regions in Brazil are shifting—previously dominant areas are under pressure due to climate change, while previously less prominent regions, benefiting from changing climate conditions and the technical advantages of latecomers, are beginning to produce Brazilian coffees that transcend traditional flavor stereotypes.
The Espírito Santo region is an emerging area in Brazil that deserves your increased attention~
