【 Premium Cold Brew Coffee 】 700ml
#Tian Zhen Series
The Tian Zhen series uses auctioned beans from around the world to create cold brew coffee,
offering everyone the chance to taste cold brew coffee made from auctioned beans. It's a touch of Tian Zhen's romantic spirit ~
Ethiopia Ephtah Coffee's Lalesa Village, which won the TOH award last year, held its first independent auction – the Beauty of Lalesa Auction.
Ephtah Coffee is located in Banko Lalisa Village (also known as Lalisa Village) within the Gedeb town administration. In 2024, Ephtah achieved excellent results in the TOH, ranking second in the Ethiopian National category and third in the African category!
.
Speaking of Ephtah, its founder Wubit Bekele visited Taiwan in 2023 to share the AMA COMMITMENT project they are promoting in Ethiopia. We were delighted to have participated in the sharing event at that time. AMA means "Mother" in the Gedio language of Yirgacheffe. "Mother" symbolizes infinite love, selfless devotion, and caring. The "AMA COMMITMENT" project is a tribute to these women smallholder farmers, expressing profound gratitude!
In Ethiopian culture, women's status is relatively low. While bearing all household chores, they also have the responsibility of raising children. In fact, Ethiopian women not only lack substantial say in life but also often have very low incomes, sometimes even relying on male family members for financial support. Therefore, the purpose of this project is to improve the lives of Ethiopian women smallholder farmers, enabling them to produce higher quality green coffee beans with sufficient funds! Early this year, after cupping the green coffee beans grown by these women smallholder farmers on-site, we discovered that their green coffee beans have immense potential and unique flavor characteristics ~
Today, we want to specifically discuss this auction. A total of 13 selected lots were offered, each from micro-lots meticulously processed by the Gedeo people at the Lalesa processing station. These coffees not only represent top-tier quality but also carry the cultivation wisdom passed down through generations and the deep emotional connection to the land by local farmers.
.
Among the 13 selected lots, we were fortunate enough to win the bid for the Tej honey wine special process natural lot.
At this point, let's first explain what "Tej" is.
Tej is Ethiopia's most representative traditional honey wine, affectionately nicknamed "the King's Drink" by locals. This is not just a casual saying – it carries thousands of years of cultural heritage and is an indispensable spiritual symbol in the lives of Ethiopians.
The production process of Tej is simple yet full of wisdom, mainly fermented from honey, water, yeast, and the most crucial ingredient, Gesho (a type of hop found only in Ethiopia). This Gesho is the soul of Tej's unique flavor, giving it a distinct personality different from other honey wines worldwide.
When you first taste Tej, you'll first experience the sweetness of honey, but then a subtle acidity perfectly balances the overall taste. Far from the syrupy sweetness one might expect, it has a fresh, wine-like quality that is both rich and refreshing.
The alcohol content is usually around 10%, making it both mild and sufficiently alcoholic. The layered taste of honey sweetness with a hint of acidity makes it hard to stop at just one sip.
In Ethiopia, Tej is not just an alcoholic beverage but also an important carrier of social and cultural life. In traditional bars in Addis Ababa or Lalibela, people gather to drink Tej and watch Eskista (traditional Ethiopian dance), creating a lively atmosphere that fills the night with vitality.
Interestingly, although Tej has an ancient history, it has shown signs of resurgence worldwide in recent years. From Europe and America to Asia, more and more people are paying attention to this ancient beverage full of stories. Ethiopian Airlines even serves Tej in its business class to passengers, giving more people the opportunity to experience this liquid culture from the African plateau.
The naming of this Tej Anaerobic Natural G1 lot is a tribute to this long history. The anaerobic process combined with the Tej fermentation process creates a very interesting and memorable special processing flavor.
Believe me, it's truly worth trying!!! Enjoy it slowly with ice, savoring the changing flavors of the cold brew as the ice melts.
