1 - Shui Sha Lian Sun Moon Lake Black Tea:
Origin: Yuchi Township, Sun Moon Lake, Nantou, Taiwan
Variety: Assam
Fermentation: Natural Heavy Fermentation

Taste: Mellow and sweet aroma, rich caramel notes, natural honey fragrance, and natural sweetness
Liquor: Clear and warm wine-red, with an orange-red luster
Lü Ming Tang's premium hand-picked Shui Sha Lian Black Tea from Sun Moon Lake is an old cultivar of Assam black tea that was once presented as a tribute to the Japanese Emperor. It is grown in Nantou. This black tea has a uniquely sweet flavor, reminiscent of caramel, though some find it similar to sweet potato, honey, or even peach. During harvest, only the bud and two leaves, without stems, are selected. This results in a Sun Moon Lake black tea that not only offers a natural sweet and lingering finish but also showcases a multi-layered aroma of premium hand-picked tea.
Brewing Method: Steep 3 grams of tea leaves in 150 ml of water at 85-90°C.
First infusion: 1 minute 10 seconds, second infusion: 50 seconds, third infusion: 1 minute, from the fourth infusion onwards: 1 minute 30 seconds.
2 - Premium Ali Mountain Jin Xuan Oolong Tea:

Variety: Taiwan Tea No. 12 (High Mountain Jin Xuan)
Fermentation: Light Fermentation

Taste: Smooth and sweet throat, overflowing with sweet fragrance

The Ali Mountain region experiences cool climates with morning and evening mists, and short average daylight hours. Most of the foothills are planted with Qing Xin Oolong and Jin Xuan, occupying half of the tea cultivation area in Chiayi County. Along County Highway 162A, from Taiping to Ruili, tea gardens can be seen covering the mountainsides in every village.
Due to the excellent growing conditions, including environment, temperature, sunlight duration, planting slope, and processing techniques, the Jin Xuan tea trees grown in the Ali Mountain high-mountain tea regions have thick yet tender leaves. The tea leaves are a vibrant green with a sheen. Notably, Jin Xuan tea possesses a delicate milky and floral aroma, combined with the fresh and elegant flavor of high altitudes. Its taste profile differs from other teas, making it highly favored by women and younger consumers.

The cool climate in the Ali Mountain region, with morning and evening mists and short average daylight, prevents the tea leaves from developing bitterness easily. The tea plants are primarily grown at altitudes between 1000 and 1800 meters. The significant temperature difference between day and night leads to slow growth of the tea trees, resulting in thick leaves and pliable stems. Irrigated with mountain spring water, the tea offers a mellow, smooth, and lively taste. It is a representative and the most important high-mountain tea producing area in Taiwan, with Ali Mountain High Mountain Tea becoming a famous local specialty. Beyond enjoying the beautiful scenery, a cup of fine tea is essential to truly appreciate the beauty of Ali Mountain.
