Diego's experimental processing methods are quite complex, which explains the exceptionally unique flavor profile. [Double Anaerobic] This process begins with 28 hours of whole cherry anaerobic fermentation in sealed containers. The second stage involves 40 hours of anaerobic fermentation with the fruit pulp. This is why it's called the double anaerobic fermentation process. During fermentation, specific containers are used, and the temperature is continuously monitored.
