Coffee Flavor
The flavors in coffee originate from the various nutrients in green coffee beans that, through roasting, undergo thermal degradation into diverse aromatic molecular structures, creating scents reminiscent of various aromas. High-quality coffee beans naturally possess a rich aroma and exhibit delightful aromatic variations at high, medium, and low temperatures, offering a pleasant experience to be savored.

Ethiopia Gesha Village
At every step of cultivation and post-harvest processing, an uncompromising pursuit of high quality is maintained. Each batch exhibits rich floral and fruity aromas, embodying iconic coffee flavor elements, and is graded accordingly. Coffees are meticulously selected through rigorous cupping sessions, evaluated according to Specialty Coffee Association protocols, and then offered to global buyers in graded batches from Gesha Village. From extremely rare high-end treasures to fully traceable single origins, the grading is as follows:
Gold Label: RARITIES
Gold Label grade represents only 10% of the total estate's production, making it exceptionally scarce. Competition lots from the estate are selected from this category, boasting top-tier flavor profiles, distinct and lasting aromas, and a refined texture, making it the preferred choice for international baristas competing in championships.
Red Label: GROWERS RESERVE
Red Label lots constitute only 15% of the estate's production, offering outstanding flavor and quality, with scores of 88 points or above on the SCA cupping form.
Green Label: SINGLE TERROIR
Lots originate from a single micro-region within Gesha Village. Each lot from a specific area has complete traceability information, including farm block name, coffee varietal, and processing date.
Gesha Village is located in the Bench-Maji Zone of Ethiopia, covering a total area of 471 hectares, with 320 hectares dedicated to cultivation. The altitude ranges from 1909 to 2069 meters, with 27% designated as conservation areas. Based on climate and varietal, it is divided into eight blocks (Bangi / Shaya / Oma / Shewa-Jibabu / Dimma / Gaylee / Narsha / Surma). The Bench-Maji Zone is situated in southwestern Ethiopia and is one of Ethiopia's two major wild forest coffee regions. Coffee trees in the wild forest are shade-grown under canopy cover, utilizing natural shade and intercropping methods to achieve sustainable environmental management.
Gesha Village aims to be the best and most environmentally conscious coffee farm in Ethiopia, committed to uncompromising quality at every stage of cultivation and processing, and dedicated to its employees and customers. It seeks to connect the world with Ethiopia and showcase all its beauty in a perfect cup of coffee.

Ethiopia Bench Maji, Lucy Station
This coffee originates from the birthplace of Gesha coffee worldwide. LUCY GEISHA is undoubtedly the mother of Gesha coffee. The processing station is located in the GEISHA region of Bench Maji, Ethiopia, adjacent to the renowned Gesha Village. Whether it's Panama Gesha, Guatemala Gesha, or Taiwanese Gesha, Gesha varietal coffees from around the globe trace their origins here. This is precisely why the processing station is named "LUCY," akin to the fossil name widely believed to be the origin of humanity. Lucy Station hopes to carry the mission of promoting Gesha coffee and sharing the world's most delicious and purest bloodline Gesha coffee with the world.
Lucy Station is relatively young, having been in operation for less than 10 years. Yet, it already produces flavors that are in no way inferior to those of Central and South American Gesha. This is attributed not only to the advantages of the local varietal but also to the soil nutrients and climate of the GEISHA region, which are perfectly tailored for Gesha coffee. The precise temperature fluctuations and rainfall continuously nurture coffee cherries with captivating flavors!

Gesha/Geisha Varietal
Gesha coffee, once named one of the "World's Top Ten Most Expensive Coffees" by Forbes, is a legendary varietal known to all in the specialty coffee world. There is significant confusion regarding the Gesha varietal, as multiple genetically distinct plant types are referred to as Gesha, many with similar geographical origins in Ethiopia. Recent genetic diversity analyses by the World Coffee Research Center have confirmed that the T2722 varietal grown in Panama and its descendants are unique and consistent. When cultivated at high altitudes and managed properly, it correlates with exceptionally high cup quality and is renowned for its delicate floral, jasmine, and peach-like aromas.
Regarding the name, the spellings Geisha and Gesha are often used interchangeably, related to transliteration, as there is no fixed translation from Ethiopian dialects to English. The coffee was initially recorded in cultivation records with the spelling Geisha, and for decades, coffee researchers and databases have largely maintained this spelling, leading to its promotion and use in the coffee industry. The varietal was originally collected from a mountain in Ethiopia, the name of which is commonly translated into English as Gesha or Geisha.
In recent years, the cultivation of the Gesha varietal has surged worldwide, achieving excellent results in major competitions. This includes countries in Central and South America such as Guatemala, Costa Rica, El Salvador, Colombia, and Peru, typically through the transplantation of the Panamanian T2722 varietal. Additionally, many high-altitude regions in Taiwan have begun cultivating Gesha, with higher altitudes generally yielding more captivating flavors.

Coffee Processing Methods
This refers to the process of transforming ripe red cherries into dried green beans. Each processing method has its advantages and disadvantages, influenced by the natural environment and specific needs of the origin. Therefore, each origin has suitable processing methods. The batches in this product listing utilize either the Natural or Anaerobic Natural processing methods, briefly described below.
【Anaerobic Processing】Anaerobic Fermentation
In a sealed container, coffee cherries are placed in an anaerobic environment created by carbon dioxide within a fermentation tank. The low-temperature environment slows down the decomposition of mucilage sugars, and the pH decreases more gradually, extending the fermentation time to develop better sweetness and a more balanced flavor. Slow, prolonged fermentation can enhance roundness and prevent unpleasant astringency and acetic acid. The sealed fermentation also prevents the loss of aromatic compounds. After anaerobic processing, it is followed by the Natural processing method, resulting in Anaerobic Natural processing.
【Natural / Sundried / Dry Processed】
Also known as natural drying or non-washed processing, this is the most traditional and common processing method, which does not involve water. Originating in Ethiopia, harvested coffee cherries are sun-dried and then de-hulled, with the beans still inside. During the prolonged sun-drying process, they absorb the flavors of the skin, pulp, and mucilage, resulting in fuller sweetness and body, and easily creating unique aromas.
Coffee producers place all cherries on drying beds under the sun, which consist of patios or raised drying platforms. Over 3-6 weeks, the coffee ferments, and producers turn them to ensure even drying and prevent spoilage. During this period, the sugars in the fruit and the mucilage adhering to the seeds develop flavor and make them sweeter. After drying, machines are used to separate the dried pulp and skin from the seeds. Natural processed coffees are juicy and syrupy, well worth the effort involved.
