__Roast Levels__
Light Roast, Light-Medium Roast, Medium Roast. Each of our coffee offerings falls within these three roast levels. To guarantee the finest flavor expression for every item, we conduct multiple roasting tests and cuppings upon initial sourcing to identify the optimal roast level for each specific coffee bean.
We designate only one ideal roast profile for each coffee variety. This approach minimizes discrepancies in roast perception for our customers and ensures that if you have any questions about the flavor of the coffee you've purchased, you can discuss it with us directly. We are happy to share our insights and conduct brewing demonstrations on the spot for your confirmation.
__Micro-Batch Roasting__
We utilize the GoCoRo digital hot air coffee roaster. This is a roaster developed and designed in-house, and it was Taiwan's first roaster designed with app control. The roaster's designer, Fred Feng, is our master roaster. The maximum batch size for this roaster is only 300g. Therefore, after each customer order is received, roasted, and flavor-tested, we only package and sell half-pound bags of coffee beans.
__Baked-to-Order Roasting__
In addition to the roasted coffee beans scheduled for sale in-store each week (all roasted beans sold in-store are within two weeks of roasting), all online orders are scheduled for roasting on the day of order placement. Roasting, resting, packaging, and shipping will be completed within three business days of receiving the order.
