Ethiopia, located in Africa, is the origin of coffee. The regions around the world suitable for growing coffee are between 25 degrees north and south latitude, encompassing the equator. Coffee growing areas require an annual rainfall of 1500 to 2000 millimeters, synchronized with the coffee tree's flowering cycle. Additionally, fertile soil, sufficient sunlight, and appropriate altitude are essential. The conditions for cultivating high-quality coffee are quite strict, including: sunlight, rainfall, soil, temperature, as well as the method of harvesting and processing the coffee beans, all of which affect coffee quality.

Botanically, the coffee tree is an evergreen belonging to the Rubiaceae family, subgenus Coffea. Coffee beans are the seeds of the coffee tree's fruit, with three main species: Arabica, Robusta, and Liberica. Specialty coffees worldwide come from the Arabica species. Within the Arabica species, there are various sub-species that have evolved through hybridization and mutation.

Coffee Processes refer to the transformation of ripe red fruit into dry green beans. Each processing method has its advantages and disadvantages, influenced by the natural environment and specific demands of the origin, leading each region to favor suitable methods. Here's a brief overview:
**【Natural / Sundried / Dry Process】**
Also known as natural drying or non-washed processing, this is the most traditional and common method. No water is used during processing. Originating in Ethiopia, harvested coffee cherries are sun-dried before hulling. The seed remains inside, absorbing flavors from the skin, pulp, and mucilage during prolonged sun exposure, resulting in fuller sweetness, body, and unique aromas.
Coffee producers place all cherries on drying beds under the sun, which can be patios or raised platforms. Over 3-6 weeks, the coffee ferments. Producers turn them for even drying and to prevent spoilage. During this period, sugars and mucilage attached to the seed create flavor and enhance sweetness. After drying, machines remove the dried pulp and skin from the seed. Natural process coffees are juicy, syrupy, and well worth the effort.
**【Washed / Wet Process】**
Also known as wet processing. Before drying, the skin and pulp are removed from all coffee cherries. They are then fermented in tanks to remove the mucilage clinging to the seeds, followed by washing with water, and finally sun-dried or machine-dried.
Washed process coffees offer a cleaner, crisper taste compared to natural process. Their body is lighter, and they typically exhibit brighter flavor profiles with the rich acidity essential for specialty coffee. They retain fruity notes and are generally easier to distinguish.
**【Honey / Pulped Natural / Semi-dry Process】**
The Honey process combines elements of both Natural and Washed methods. Its development began in Costa Rica. Like the Washed process, the skin and pulp are removed, but instead of fermentation tanks, the mucilage is retained and sun-dried. The term "honey" refers not to added honey, but to the very sticky mucilage layer, which feels like honey, hence the name. This mucilage layer retains a high proportion of sugars and acids, which is key to the Honey process; the amount of remaining mucilage determines the sweetness.
The flavor profile of the Honey process falls between Natural and Washed. It produces a very unique coffee with a cleaner profile than Natural, and due to the residual mucilage, it offers richer syrupy sweetness and more pronounced acidity, yet with more body than Washed.
