These are select prime pork bones, characterized by their dense structure and abundant marrow, brimming with collagen and vital nutrients. **Step 1: Simmering the Broth**
Ingredients: 1.5kg Jihēitun (極黑豚) soup bones (blanched beforehand), chicken feet (for thickening, optional), 5L water, 2 stalks green onion, 6 slices ginger, appropriate amount of white peppercorns.
Method: Bring to a boil over high heat for 20 minutes, then skim off any foam. Add green onion, ginger, and peppercorns. Reduce to medium-low heat and simmer for 3–4 hours until the broth becomes milky white. (Cooking time can be reduced if using a pressure cooker.) Stirring continuously during cooking can accelerate the emulsification of marrow and collagen, making the broth progressively whiter and richer.
★ Tip: You can add rice wine, onion, or ginger and scallions during cooking to remove any gamey smell. You can also make a large batch and freeze it in portions. Thaw and reheat before use for quick ramen, congee, or hot pot broths.
**Extended Variation: Tonkotsu Udon Noodles**
1. Thaw the broth: Pour the chilled or frozen Jihēitun (極黑豚) pork bone broth into a pot and heat over medium-low heat until slightly simmering.
2. Cook the udon noodles: In a separate pot, bring water to a boil and cook the udon noodles. Once cooked, drain and set aside. In the same pot, blanch slices of meat and your favorite vegetables, then drain.
3. Prepare the seasoning: In an individual serving bowl, add a small amount of soy sauce, mirin, and minced garlic. Pour the simmering tonkotsu broth into the bowl and stir lightly to create the soup base.
4. Assemble and serve: Add the udon noodles, meat slices, and vegetables to the bowl. Finally, top with a soft-boiled egg and sprinkle with chopped green onions. A few drops of sesame oil can be added for fragrance. — Done!
