Their availability lasts only two to three weeks; miss them, and you'll wait another year. Over a thousand years ago, imperial couriers raced day and night, just to deliver lychees from Lingnan to Chang'an. Su Dongpo famously said, "I could live in Lingnan forever, if only to eat 300 lychees a day," willing to stay in the region for the fruit. Today, we don't need swift horses. We capture this flavor in a different way. Fruit farmers harvest them in the early morning, then immediately chill and deliver them to us. We select the plumpest fruits, peel and pit them, then slowly roast them into dried fruit. Once the dried fruit is ready, we chop it into small pieces and mix it into the filling. The outer dough is rolled into thin layers, then filled, shaped, and baked. Each pastry is made with care, no rushing allowed. A bite reveals the fragrant aroma of lychee, sweet yet not cloying, with a subtle hint of refreshing tartness. It has small seeds, thick flesh, and high sugar content. In Japanese supermarkets, lychees are sold by the piece and command a high price. We wanted to create a souvenir that captures this flavor. Pineapple cakes are everywhere; after a while, gifting them loses its novelty. The Lychee Pastry is different. Few people make it, ensuring the recipient will remember it. We named it "Imperial" because lychees inherently carry this esteemed connotation. It also serves as a reminder to craft this pastry worthy of its name. ---------------- **Three Days and Three Nights** The dried Gagei lychee is the soul of this pastry. Gagei lychees are high in sweetness and flesh, but also in water content. High-moisture fruits like lychees must be dehydrated first; otherwise, they will release moisture when enclosed in the pastry. We use low-temperature slow roasting to gradually evaporate the water, concentrating the sugars. __Three days and three nights, turned over every half day.__ After roasting, they are baked again for half a day to ensure all moisture is removed. This process cannot be rushed; doing so would result in a sour or bitter taste, losing the lychee's natural delicate sweetness.
