[Pork Belly] The pork belly from the chest and abdomen of carefully selected pigs has distinct layers. After the complicated process of frying and braising, the meat is crispy on the outside and tender on the inside, the lean meat is not dry, the fat meat is not greasy, and it melts in your mouth.

- We use pork belly from the chest and abdomen with alternating fat and lean parts and distinct layers. It is first fried at high temperature to force out excess fat, then simmered over a slow fire until it is tender but not mushy. It is paired with sun-pickled pickled plums, and the salty and oily aromas blend perfectly and complement each other. The dish is upgraded with "clear soup abalone", which is cooked in pure salt water. The meat is firm and tender, fresh and sweet, enriching the overall layered taste and flavor.
