**Coffee Flavor**
The diverse nutritional components within green coffee beans undergo thermal degradation during roasting, transforming into various aromatic molecules that create complex flavor profiles. High-quality coffee beans possess naturally rich aromas that evolve beautifully at different temperatures—high, medium, and low—offering a delightful sensory experience worth savoring.

The most successfully marketed and highest-priced coffee in the world originates from Jamaica Blue Mountain. Its flavor is sweet, smooth, rounded, full-bodied, clean on the palate, with a lingering aftertaste.
Blue Mountain Coffee refers to high-quality coffee grown in a specific region of the Blue Mountain range in eastern Jamaica. Surrounded by the Caribbean Sea, on clear days, the sun reflects off the azure waters, casting a brilliant blue hue on the mountains, thus giving them their name. In 1953, to maintain the quality of Blue Mountain coffee, the Jamaican government established the Coffee Industry Board (CIB). Before export, Jamaican coffee must pass a series of stringent quality assessments by the CIB to receive a "Certificate of Origin" from the government, officially bearing the name "Blue Mountain." Therefore, authentic Blue Mountain coffee is legally authorized and certified for export.
In the Jamaica Blue Mountains, ideal conditions prevail: favorable altitudes, mineral-rich soil, gentle cloud cover, shade, and ample sunlight. The high-mountain climate is cool with significant diurnal temperature variations, extending the coffee's maturation period and increasing the sugar content within the beans, thus enhancing their rich aroma. Not all coffee grown on these mountains is "Blue Mountain Coffee." Only coffee cultivated within the legally designated growing zones, at altitudes between 915 and 1675 meters, qualifies as Blue Mountain Coffee.
------
Some coffees marketed as Blue Mountain are not authentic:
◆ Jamaican Coffee is not necessarily Blue Mountain Coffee
Only coffee produced in the legally designated Blue Mountain region in eastern Jamaica, at altitudes between 915 and 1675 meters, is true Blue Mountain Coffee.
◆ Blue Mountain Blend Coffee is not Blue Mountain Coffee
This is a blend created to mimic the Blue Mountain flavor profile; it cannot be compared to genuine Blue Mountain coffee.

❱ Country Traders Estate
Country Traders Limited, established in Kingston, Jamaica, is a renowned roaster and exporter of Blue Mountain coffee, as well as an officially authorized distributor and trademark user of JACRA. The company has long-standing partnerships with smallholder farmers in the core Blue Mountain growing regions and operates its own farm in the Silver Hill area, ensuring stable and traceable green bean quality.
❱ Blue Baron Estate
Located in Jamaica's famed Blue Mountain Range at an altitude of approximately 3,000 feet (about 914 meters), this estate is owned by the Minott family from Mandeville. The Minott family has been deeply involved in Jamaica's coffee industry for 75 years, passing down their expertise through generations.
Blue Baron Estate spans approximately 138 acres (about 55.8 hectares), with about 60 acres (about 24 hectares) dedicated to coffee cultivation, nurtured by dense shade trees and the natural mist from the mountains. The cool microclimate created by the cloud cover effectively slows the maturation of the coffee cherries, concentrating their sugars and refining the flavor.
The estate insists on hand-picking the entire harvest, selecting only fully ripe red cherries. To ensure quality, each coffee tree is revisited up to 10 times or more, with cherries picked individually based on their ripeness. This is because coffee cherries on the same tree do not ripen simultaneously; it's common to find unripe fruit, ripe fruit, and even blossoms on the same branch. It is this meticulous care and patience that cultivates the unique delicate layers of Blue Mountain coffee.
❱ Silver Hill Estate
One of the four coffee farms designated by the Jamaican government since 1953, SILVER HILL provides ideal conditions for growing coffee. Nestled in a secluded location below the majestic rainforest, Silver Hill Estate offers the perfect environment for cultivating some of the world's finest Jamaican Blue Mountain coffee beans. These beans are meticulously selected and processed under the control of JACRA (formerly the Jamaica Coffee Industry Board).

Jamaica "Blue Mountain Coffee" Grading
From highest to lowest quality, the grades are: NO.1, NO.2, NO.3, and Peaberry. This batch is the top-tier Blue Mountain Coffee, No.1.

Botanically, coffee trees are evergreen shrubs belonging to the genus Coffea in the family Rubiaceae. Coffee beans are the seeds of the coffee tree's fruit, with three main species: Arabica, Robusta, and Liberica. These three species cannot interbreed to produce different subspecies. World-renowned specialty coffees come from the Arabica species, which itself has various evolved, hybridized, and mutated subspecies.
The Arabica Typica varietal is one of the closest to the original species. It has a slightly elongated bean shape, a clean citric acidity, a sweet aftertaste, and an elegant flavor profile. However, it is delicate and has low resistance to leaf rust, making cultivation challenging and resulting in low yields. Excellent estate coffees like Jamaica Blue Mountain, Sumatra Mandheling, and Hawaii Kona are all of the Typica varietal.
Commonly used in blends to create a Blue Mountain-like flavor are beans like Mandheling or New Guinea, which exhibit Typica characteristics, combined with low-acidity, sweet Brazilian beans. However, the resulting complexity of taste differs significantly from the clean balance of authentic Blue Mountain Coffee No.1. Blue Mountain Coffee No.1 achieves a depth of flavor in a light-medium roast that many other coffee beans only reach with a dark roast, offering a sweetness that builds and lingers on the palate.

Coffee Processing Methods
This refers to the process of transforming ripe red fruit into dry green beans. Each processing method has its advantages and disadvantages, influenced by the local environment and specific requirements. Therefore, each region adopts processing methods suitable for its conditions. This batch utilizes the washed process.
**【Washed Process】Washed / Wet Processed**
Also known as wet milling, this method involves removing the skin and pulp from the coffee cherries before drying. The beans are then soaked in fermentation tanks to remove the remaining mucilage, followed by washing and drying in the sun or by machine.
The washed process typically results in a cleaner, crisper taste compared to the natural (sun-dried) process. It generally has a lighter body and brighter flavor expression, featuring the vibrant acidity characteristic of specialty coffees. Fruit notes are also present, and the flavors are usually more distinct.
