Botanically, the coffee tree is an evergreen belonging to the Rubiaceae family, coffee subgenus. Coffee beans are the seeds of the coffee tree's fruit, with three main species: Arabica, Robusta, and Liberica. Coffee Processes
This refers to the transformation of ripe red fruit into dried green beans. Each processing method has its advantages and disadvantages, influenced by the natural environment and local needs. Therefore, each origin has a suitable processing method, generally as follows:
**【Natural Process】(Sundried / Dry Processed)**
Also known as natural drying or non-washed processing, it is the most traditional and common method, not involving water in the processing. Originating in Ethiopia, harvested coffee cherries are sun-dried and then de-pulped. The seed remains inside, absorbing flavors from the husk, pulp, and mucilage during prolonged sun exposure, resulting in fuller sweetness and body, and easily creating unique aromas. Coffee producers place all cherries on drying beds in the sun, which may be patios or elevated platforms. Over 3-6 weeks, the coffee ferments, and producers turn them to ensure even drying and prevent spoilage. During this period, the sugars in the fruit and the mucilage adhering to the seed develop flavor and sweeten them. After drying, machines separate the dried pulp and husk from the seed. Coffee processed naturally is juicy and syrupy, well worth the effort.
**【Washed Process】(Wet Processed)**
Also called wet processing, before drying, all coffee fruit is de-pulped and de-muilaged, then soaked in fermentation tanks to remove the mucilage layer remaining on the seed. It is then washed with water and dried by sun or machine. The washed process yields a cleaner, crisper mouthfeel compared to the natural process, with a lighter body and generally brighter flavor expression, possessing the rich acidity essential for specialty coffee. It also retains fruity notes and is usually easier to distinguish.
**【Honey Process】(Pulped Natural / Semi-dry Process)**
The honey process is a method that combines aspects of the natural and washed processes. It was first developed in Costa Rica. Similar to the washed process, the fruit pulp is removed, but instead of fermentation tanks, the coffee is sun-dried with the mucilage layer intact. "Honey" does not refer to added honey; it refers to the very sticky mucilage layer, which feels like honey, hence the name. The mucilage layer retains a high proportion of sugars and acids, which is key to the honey process; the amount of remaining mucilage determines the sweetness.
