For this batch, the washed processing method has been employed, as described below. 【Washed Method】Washed / Wet Processed Also known as wet milling, this method involves removing the skin and pulp from the coffee cherries before drying. The beans are then fermented in water tanks to remove the mucilage layer, followed by washing and drying in the sun or by machine. Compared to the natural (sun-dried) process, the washed method yields a cleaner, crisper cup profile. Its body is typically lighter than that of naturally processed coffees, often resulting in brighter flavor expressions. It is characterized by the vibrant acidity essential for specialty coffee, along with fruity notes that are generally easier to discern. ------ Brief Introduction to Sky Castle Bean Processing: Upon arrival at the processing station, farmers first pre-select the fresh cherries, removing overripe, underripe, insect-damaged, yellow, green, or frost-damaged berries, as well as foreign materials like twigs and stones. After the initial hand selection, the cherries are placed in a flotation tank to separate lighter, less dense beans from those that sink. The sinking beans are then fed into a depulping machine (Penagos). The depulped, parchment-covered beans undergo a 12-hour fermentation process. Subsequently, they are gravity-graded using water channels into A1 to A4 grades. The highest density beans, A1, are moved to pre-drying beds for intensive second-stage hand selection over 24 to 48 hours. Finally, the beans are spread on African beds for sun-drying. To protect them from high temperatures and humidity, the parchment-covered beans are covered during peak sun hours (12:00-14:00) and during rainfall. The average drying period is approximately 15 to 20 days.
