Coffee originated in Ethiopia. Regions suitable for coffee cultivation lie between 25 degrees north and south latitude, encompassing the equator. Coffee-growing areas require an annual rainfall of 1500-2000 mm, synchronized with the coffee tree's flowering cycle. Additionally, fertile soil, ample sunlight, and appropriate altitude are crucial. The conditions for cultivating high-quality coffee are stringent, including sunlight, rainfall, soil, temperature, as well as the harvesting and processing methods, all of which significantly impact the coffee's quality.

Coffee Processes
This refers to the transformation of ripe coffee cherries into dried green beans. Each processing method has its merits and drawbacks, influenced by the local environment and specific needs, leading each region to adopt the most suitable method. The processing method for this batch of coffee is detailed below:
【Washed Process】
Also known as the wet process, this method involves removing the skin and pulp from the coffee cherries before drying. The beans are then fermented in water tanks to remove any remaining mucilage, followed by washing and drying in the sun or using machinery.
The washed process generally yields a cleaner, crisper taste profile with a lighter body compared to the natural process. It typically offers brighter flavor expressions and the desirable acidity essential for specialty coffee, along with fruity notes that are often more distinct and easier to discern.
【Natural Process】
Also called sun-dried or dry process, this is the most traditional and common processing method, not requiring water. Originating in Ethiopia, harvested coffee cherries are dried whole in the sun before hulling. During the prolonged sun-drying period, the seeds absorb flavors from the fruit pulp and mucilage, resulting in a fuller body and enhanced sweetness, often creating unique aromatic qualities.
Coffee producers spread the whole cherries on drying beds, which can be patios or raised platforms. Over 3-6 weeks, the coffee ferments, and producers turn them regularly to ensure even drying and prevent spoilage. During this time, the sugars in the fruit and the mucilage adhering to the seed contribute to the flavor development and sweetness. Once dry, machines remove the dried husk and pulp from the seeds. Natural process coffees are known for their juicy, syrupy texture and are well worth the meticulous effort involved.
