Coffee originated in Ethiopia. Regions suitable for coffee cultivation are located between 25 degrees north and south latitude, encompassing the equator. Coffee growing areas require annual rainfall of 1500-2000 mm, synchronized with the coffee tree's flowering cycle. Additionally, fertile soil, ample sunlight, and appropriate altitudes are essential. The cultivation of high-quality coffee is subject to stringent conditions, including sunlight, rainfall, soil, temperature, as well as the harvesting and processing methods, all of which significantly impact the coffee's quality.

Coffee Processing
This refers to the method of transforming ripe red cherries into dried green beans. Each processing method has its advantages and disadvantages, influenced by the origin's natural environment and specific requirements. Consequently, different regions employ suitable processing methods. The processing method for this batch is briefly described below:
【Washed Process】
Also known as the wet process, this method involves removing the skin and pulp from the coffee cherries before drying. The beans are then fermented in water tanks to remove the mucilage, followed by washing and drying (either by sun or machine).
The washed process yields a cleaner, crisper cup profile compared to the natural process. While it typically has a lighter body, it often presents brighter flavors and the essential acidity found in specialty coffee. Fruit-like notes are also present, and flavors are generally more distinct.
【Natural Process】
Also called sun-dried or dry process, this is the most traditional and common method, requiring no water. Originating in Ethiopia, this process involves drying the whole coffee cherries under the sun before hulling. As the seeds dry within the fruit, they absorb the flavors of the skin, pulp, and mucilage, resulting in a fuller sweetness, richer body, and unique aromatics.
Coffee producers spread the entire cherries on drying beds under the sun, which can be patios or raised platforms. Over 3-6 weeks, fermentation occurs, and producers turn the beans to ensure even drying and prevent spoilage. During this period, the sugars within the fruit and the mucilage adhering to the seeds develop flavor and enhance sweetness. Once dry, machines are used to separate the dried pulp and skin from the seeds. Natural processed coffees are juicy and syrupy, well worth the effort involved.
