Coffee Processes
This refers to the transformation of ripe red cherries into dried green beans. Each processing method has its merits and drawbacks, influenced by the origin's natural environment and specific needs, leading each region to adopt suitable methods. Here's a brief overview of the processes used for this batch of coffee:
【 Washed Process 】 Washed / Wet Processed
Also known as wet processing, this method involves removing the skin and pulp from the coffee cherries before drying. The beans are then fermented in water tanks to eliminate any remaining mucilage, followed by washing and drying in the sun or using machinery.
Washed process coffees offer a cleaner, crisper taste compared to natural process. They tend to have a lighter body and brighter flavor profiles, with the vibrant acidity characteristic of specialty coffee. Fruit notes are also present, and the flavors are typically easier to discern.
【 Natural Process 】 Natural / Sundried / Dry Processed
Also called sundried or dry processed, this is the most traditional and common method, requiring no water. Originating in Ethiopia, coffee cherries are sun-dried whole before hulling. During the prolonged sun-drying period, the seeds absorb flavors from the skin, pulp, and mucilage, resulting in a fuller body and enhanced sweetness, often yielding unique aromas.
Coffee producers spread the cherries on drying beds, which can be patios or raised platforms. Over 3-6 weeks, the coffee ferments. Producers turn them regularly for even drying and to prevent spoilage. During this time, sugars and mucilage clinging to the seeds develop flavor and sweetness. After drying, the dried pulp and skin are mechanically separated from the seeds. Natural processed coffees are juicy and syrupy, truly justifying the effort involved.
