■ Traditional malt sugar
Traditional maltose is different from the maltose used in the modern food industry. It is made from wheat and glutinous rice and undergoes multiple processes of germination, juice extraction, soaking, slow cooking and filtration for about 7 days. It has a rich and full flavor. Since maltose has good moisturizing properties and is only 40% as sweet as sucrose, it does not have the sweetness of sucrose and is very suitable for making desserts.
In the past, Xinzhuang was the main producer of traditional malt in Taiwan. With the development of the modern food industry, malt made from refined starch and chemical methods has almost replaced the use of traditional malt, and traditional malt factories have gradually withered away.
