Chambord's classic original butterfly pastry is an adaptation of the recipe by French master Pierre Hermé. While the ingredients are simple, the creation process is remarkably intricate. Dough made from flour, natural butter, and water is rested in the refrigerator for half a day, then fully encased in fermented butter. After each rolling and folding, the dough must be chilled until completely relaxed. This process is repeated six times with threefold folds, resulting in the 730 layers of our signature pastry. Once carefully shaped and sprinkled with alluring sugar crystals, they are baked at a high temperature of 250°C, allowing each butterfly pastry to puff up perfectly. It takes three days to create a butterfly pastry that is crisp on the outside yet melts in your mouth within!
