The leaves of Jin-Xuan Oolong Tea (阿里山金萱烏龍茶) are grown in the famous Alishan in Taiwan. At the elevation of 1,200 to 1,700 meters, the mountainsides are covered with fog or clouds which are ideal for growing tea trees.
**The Jin-Xuan(金萱) Variety of Tea Tree**
Jin-Xuan is a new and unique tea cultivar that’s bred artificially from Taiwan Tea Research & Extension Station (TRES). It is also known as milk oolong for its milky fragrance and taste because proper brewing techniques will bring out those notes.
**It was popularized because of its golden liquor, buttery mouthfeel, and overwhelming notes of sweet cream.**
The process of producing JinXuan is hand-plucking, light oxidation, and light roasting. Light oxidation provokes the aroma. Light roasting preserves the flavor. You’d enjoy the original JinXuan tea plant cultivar and the essence of the mountains(Shāntóu qì 山頭氣) of Alishan.

Tasting the **Shāntóu qì**: Terroir. Varieties of the tea plant
The unique features of a local environment always give special characteristics to its inhabitants. As well as the concept that every tea has a unique character. Tea plants absorb nutrients from different kinds of soil and are grown in different environments, which produce a unique tea flavor, which is called " Shāntóu qì (山頭氣) ".
Lightly oxidized and roasted – Taiwan High Mountain tea is produced with the least manual process. The color of the tea liquid is golden. You may taste the original and unique fragrance of the tea plant.
