Botanically, the coffee tree is an evergreen belonging to the Coffea genus in the Rubiaceae family. Coffee beans are the seeds of the coffee tree's fruit. There are three main species: Arabica, Robusta, and Liberica. World-class specialty coffees are all derived from the Arabica species, which itself has various subspecies that have evolved, hybridized, or mutated.

Coffee Processes
refer to the steps taken to transform ripe red fruit into dried green beans. Each processing method has its advantages and disadvantages, influenced by the local environment and specific needs. Therefore, each origin has its suitable processing methods, broadly categorized as follows:
**【Natural Process】Natural / Sundried / Dry Processed**
Also known as sun-dried or dry processing, this is the most traditional and common method, requiring no water during processing. Originating in Ethiopia, harvested coffee cherries are dried in the sun before hulling. The seeds remain inside, absorbing flavors from the skin, pulp, and mucilage during prolonged sun exposure, resulting in fuller sweetness and body, and producing unique aromas.
Coffee producers lay all cherries on drying beds in the sun, which can be patios or elevated platforms. Over 3-6 weeks, the coffee ferments, and producers turn them for even drying and to prevent spoilage. During this time, the sugars in the fruit and the mucilage attached to the seeds create flavor and sweetness. After drying, machines separate the dried pulp and skin from the seeds. Natural processed coffees are juicy and syrupy, well worth the effort.
**【Washed Process】Washed / Wet Processed**
Also known as wet processing, before drying, all coffee cherries have their skin and pulp removed and are then fermented in water tanks to remove the mucilaginous layer remaining on the seeds. Afterward, they are washed with water and dried by the sun or machine. Washed process coffees offer a cleaner, crisper mouthfeel compared to natural process, with a lighter body. They typically exhibit brighter flavor profiles with the vibrant acidity characteristic of specialty coffee. They also retain fruit notes and are generally easier to distinguish.
**【Honey Process】Honey / Pulped Natural / Semi-dry Process**
The Honey process is a hybrid method combining aspects of the Natural and Washed processes, first developed in Costa Rica. Like the washed process, the skin and pulp are removed, but instead of fermentation tanks, the beans are sun-dried with the mucilage layer intact. The term "honey" does not refer to added honey but to the sticky mucilage layer, which is as viscous as honey, hence the name "honey process." The mucilage layer retains a high proportion of sugars and acids, which is key to the honey process; the amount of remaining mucilage determines the sweetness.
