Botanically, the coffee tree is an evergreen belonging to the Coffea subgenus of the Rubiaceae family. Coffee beans are the seeds of the coffee tree's fruit, with three main varieties: Arabica, Robusta, and Liberica. World-class specialty coffees are derived from the Arabica species, which itself has numerous sub-varieties evolved, hybridized, or mutated from the original Arabica.

Coffee Processes refer to the transformation of ripe red fruit into dried green beans. Each processing method has its advantages and disadvantages, influenced by the natural environment and regional needs. Therefore, each origin has its suitable processing method, briefly outlined as follows:
**【Natural Process】**
Also known as sun-dried or dry processed, this is the most traditional and common processing method, requiring no water during processing. Originating in Ethiopia, harvested coffee cherries are sun-dried and then de-hulled, with the seeds still inside. During the prolonged sun exposure, the beans absorb flavors from the skin, pulp, and mucilage, resulting in fuller sweetness and body, and are prone to developing unique aromas.
Coffee producers place all cherries on drying beds under the sun, which can be patios or raised platforms. Over 3-6 weeks, the coffee ferments, and producers turn them for even drying and to prevent spoilage. During this period, sugars in the fruit and mucilage adhering to the seeds develop flavors and make them sweeter. After drying, machines separate the dried pulp and skin from the seeds. Natural processed coffees are juicy, syrupy, and well worth the effort.
**【Washed Process】**
Also known as wet processed, before drying, all coffee cherries have their skin and pulp removed. They are then soaked in fermentation tanks to remove the mucilage residue on the seeds, followed by washing with water and drying under the sun or by machine. The washed process yields a cleaner, crisper mouthfeel compared to the natural process, with a lighter body and usually brighter flavor expression. It possesses the rich acidity essential for specialty coffee and often exhibits fruity notes, making it generally easier to distinguish flavors.
**【Honey Process】**
The Honey process combines elements of the natural and washed methods, initially developed in Costa Rica. Similar to the washed process, the skin and pulp are removed, but instead of using fermentation tanks, the mucilage is left on and sun-dried. "Honey" does not refer to added honey; the term comes from the very sticky mucilage layer, which feels like honey, hence the name. The mucilage layer retains a high proportion of sugars and acids, which is key to the honey process. The amount of mucilage left determines the sweetness.
