The Karaa Factory is well-known in the specialty market for its precise fermentation processes, clean water sources, and rigorous grading standards. Each cherry is hand-picked by smallholder farmers before being sent to the processing plant for double fermentation, repeated washing, and slow drying on raised beds. These meticulous steps create the unique cleanliness, bright acidity, and delicate fruit layers found in Karaa lots. In the cup, a black tea aroma emerges first, followed by a bright citrus zest.
