High-quality coffee beans possess a naturally rich aroma, exhibiting delightful variations in natural scent as they cool from high to low temperatures—truly worth savoring. https://justincoffee.shop.rakuten.tw/gold/OtherDrive/JC_world_map_740JPG.jpg Peru is the world's largest exporter of organic Arabica coffee. Thanks to its high-altitude growing regions and fertile soil, the coffee exported by Peruvian smallholders offers stunning flavor profiles. When thinking of Peru, the mysterious Machu Picchu and Inca civilization often come to mind. In fact, Peru features nearly 30 mountains exceeding 6000m in altitude. Beyond its mountainous terrain, Peru also encompasses rainforest climates, deserts, and tropical savannas. These unique and diverse topographies are ideal for cultivating specialty coffee. Peruvian coffee is produced by smallholders, and the varied climate and geography imbue the coffee with great diversity. https://justincoffee.shop.rakuten.tw/gold/OtherDrive/JC_Varieties_740.jpg Botanically, the coffee tree is an evergreen belonging to the Rubiaceae family, Coffea genus. Coffee beans are the seeds of the coffee fruit. There are three main varieties: Arabica, Robusta, and Liberica, which cannot cross-pollinate to create different subspecies. All specialty coffee in the world comes from the Arabica species, which itself has evolved through various mutations and cross-breeding to form numerous Arabica subspecies. Arabica Coffee Variety - Geisha/Gesha Known as one of the "world's ten most expensive coffees" by Forbes, the Geisha variety is a legend well-known to specialty coffee lovers. There is significant confusion surrounding the Geisha variety because various genetically distinct plants are referred to by this name, many of which share similar geographic origins in Ethiopia. Recent genetic diversity analyses by World Coffee Research have confirmed that the progeny of the T2722 variety grown in Panama is unique and consistent. When managed well at high altitudes, it correlates with exceptionally high cupping quality and is renowned for its delicate floral, jasmine, and peach-like aromas. The Geisha variety that has grown and thrived in Panama for over 60 years is the T2722 variety. It was originally collected from coffee forests in Ethiopia in the 1930s. It was sent to the Lyamungu Research Station in Tanzania and subsequently brought to the Centro Agronómico Tropical de Investigación y Enseñanza (CATIE) in Costa Rica in 1953, where it was cataloged as T2722. In the 1960s, after it was recognized for its tolerance to coffee leaf rust, it was sold throughout Panama via CATIE. However, because the plant had brittle branches, it was not favored by farmers and was not widely planted. It wasn't until 2005 that the Peterson family of Boquete, Panama, entered this coffee into the Best of Panama competition and auction, which launched its rise to fame. It received extremely high ratings and broke the then-record for green coffee auction prices. Regarding the name, the spellings "Geisha" and "Gesha" are often used interchangeably. This is due to transliteration, as there is no fixed translation from the Ethiopian dialect to English. The coffee was initially recorded as "Geisha" in planting records, a spelling maintained for decades by coffee researchers and databases, leading to its initial promotion and use throughout the industry. The variety was originally collected from a mountain in Ethiopia, the name of which is typically translated into English as "Gesha" or "Geisha." In recent years, the cultivation of the Geisha variety has emerged worldwide, achieving success in major competitions. Countries including Guatemala, Costa Rica, El Salvador, Colombia, and Peru in Central and South America typically cultivate the variety via transplants of the Panamanian T2722 lineage. Furthermore, many high-altitude regions in Taiwan have also begun planting Geisha; generally, the higher the altitude, the more captivating the flavor. https://justincoffee.shop.rakuten.tw/gold/OtherDrive/JC_Processing_740.jpg Coffee Processes This refers to the process of turning mature red cherries into dried green beans. Each processing method has its own characteristics, influenced by the natural environment and local requirements of the origin; thus, each region has its preferred method. This batch uses the washed process, described briefly below. 【Washed Method】Washed / Wet Processed Also known as wet processing, the skin and pulp of the coffee cherries are removed before drying. The beans are then fermented in water in fermentation tanks to remove the mucilage adhering to the seeds, washed with water, and dried via sun or machinery. Washed processing results in a cleaner, crisper mouthfeel compared to natural processing. The body is generally lighter than that of natural-processed coffee, often exhibiting brighter flavor expressions, the rich acidity essential to specialty coffee, and fruity notes that are typically easier to distinguish. https://justincoffee.shop.rakuten.tw/gold/OtherDrive/JC_Roasting_740.jpg https://justincoffee.shop.rakuten.tw/gold/OtherDrive/JC_filter_740.jpg https://justincoffee.shop.rakuten.tw/gold/OtherDrive/JC_GoldCup_QRcode_740.jpg https://justincoffee.shop.rakuten.tw/gold/OtherDrive/JC_Pour_Over_Coffee.jpg Manufactured by: Justin Enterprise Co., Ltd.
