Speaking of summer, how can there be no summer cold soup full of bubbles: Okróshka (Russian: окро́шка)! This is a very classic and popular summer cold soup, which is said to have originated in the Volga region of Russia, and can be seen in the former Soviet Union countries.
Soups consist mainly of raw vegetables (such as cucumbers, radishes, and shallots), boiled potatoes, eggs, cooked meat (such as beef, veal, sausage, or ham), and kvass (a type of fermented rye or rye bread). low-alcohol beverages). Sour cream (smetana) is often added as a garnish. Improved versions later in the Soviet era used watered down or diluted kefir, whey, ayran or mineral water instead of kvass.
