◎ There are four small categories of processed fruits:
The first category is candied fruit. Modern additives have become very complicated. They are completely different from ancient flavors. After visiting the factory to learn about the production process, many people may not dare to eat it.
The second category is the most common commercially available dried fruit, which always contains various colors, flavors and preservatives, and is accompanied by a very large amount of sugar. This type of product is common in airport shops, food exhibitions, tourist areas, vegetable markets and night markets. , The quantity is large and cheap, it is a CP value route.
The third category is the dried fruit of the Honshanren route. Only the minimum and most necessary salt and sugar are added. For some types, a very small amount of pure brewed plum powder or plum juice is added to enhance the sour aroma.
The fourth category is the relatively most expensive 100% dried fruit with no additives. It is not guaranteed to be the best, but it is the closest to the original state. It is normal that the taste will be more dry, and it will be more refreshing to eat directly.
◎ Process of dried fruit:
All of them come from orchards in central and southern Taiwan. They are mainly baked in an electric furnace at a low temperature, and the flavor and nutrients are best maintained between about 45-50 degrees Celsius. If exposed to sunlight, bacteria, mosquitoes, and a variety of dust are prone to fall, and it must depend on the weather. However, Taiwan is too humid and food is easily spoiled or contaminated by exposure, which is no longer the same as 50 years ago.

If we are only willing to blindly adopt a certain type of fruit from a specific region, we will inevitably face the problem of imbalance in production and sales.
