The owner of El Sunzita – Mauricio and Mary acquired a part of the farm 29 years ago and started operating the entire farm independently from 2015. To this end, they established plant cultivation to take care of the more fragile coffee trees, and set up a pilot-type washing plant to find the best way to grow and handle from the constant experiment. Most of El Salvador's coffee is Bourbon, and this is a rare Pacas. Pacas is a natural mutant of Bourbon, first discovered in the production area of Santa Ana in 1949.
